Curried Sweet Potato Soup
Ingredients
- 1 Tbsp. vegetable oil
- 1 small yellow onion, cubed
- 1 teaspoon minced garlic
- 3 large sweet potatoes, peeled and cut into cubes (or 6 cups cubed pumpkin)
- 2 cups chicken stock, divided
- 2 tsp. curry powder
- 1/4 teaspoon turmeric
- Pinch of ground ginger
- Pinch of red pepper flakes
- 1 cup half and half
- 1 tsp. salt
- 1/2 teaspoon ground pepper
Directions
- Add oil to a large saucepan over medium heat. Saute onion and garlic until softened, about 1-2 minutes.
- Add in sweet potato and stir fry for a minute.
- Pour in 1 cup chicken stock, curry powder, turmeric, ginger, and red pepper flakes. Bring to boil and simmer for 15 minutes.
- Let mixture cool down a little before blending in a blender or food processor until smooth.
- Return blended mixture to stove, add in remaining chicken stock, half and half, salt and pepper. Simmer again for about 10 minutes.
- Serve hot.
