Pumpkin Chocolate Chip Muffins
Ingredients
- 3/4 cup packed brown sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 cup canned pumpkin
- 1/4 cup water
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3/4 cup semisweet chocolate chips
Directions
- Preheat the oven to 375 degrees Fahrenheit. Grease and flour 12 standard-sized muffin cups or use paper liners.
- In a large mixing bowl, mix together the flour, baking powder, baking soda, salt, and spices. In a separate bowl, mix together the brown sugar, oil, and eggs. Add pumpkin and water. Add to dry ingredients and mix until combined. Stir in chocolate chips
- Fill muffin cups 2/3 full with batter. Bake in preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
