- 6 Tablespoons butter, softened
- 1/4 cup confectioners' sugar
- 1 cup all-purpose flour
- 6 eggs
- 2 cups white sugar
- 2 Tablespoons grated lemon zest
- 1/2 cup lemon juice
- 6 Tablespoons all-purpose flour
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Process butter, confectioners' sugar, and 1 cup flour in food processor 10 seconds, or blend with pastry blender until dough comes together. Pat dough evenly into 9 inch round tart pan
- Bake 12 to 15 minutes, until golden.
- Combine eggs, white sugar, lemon zest, lemon juice and 6 tablespoons flour and mix until smooth; pour mixture over hot crust.
- Bake 15 to 20 minutes more, until firm. Let cool completely in baking dish. Sprinkle with etra confectioners' sugar and cut into 12 triangles.
